Lecithin improves the moisture tolerance and uniform suspension of ingredients in baking. It stabilizes fats and oils to reduce rancidity and prolongs freshness. Lecithin is sometimes used as an emulsifier and to prevent sticking. A good ingredient to have on hand for every day use or to store in your emergency food storage supply.
Shelf Life
Ingredients: defatted soya flour, liquid soya lecithin, dolomite.
Liquid: soy lecithin.
Directions: Use lecithin in baking breads, rolls, muffins, biscuits, pancakes, etc. by adding approximately 2 tbs. per 3-4 cups flour. Improves the moisture tolerance and uniform suspension of ingredients. It stabilizes fats and oils, reducing rancidity and prolongs freshness. May be added to protein drinks and juices blended in a juicer.
