Ingredients: Part-skim milk, cheese cultures, salt, enzymes, annatto (vegetable color).
Directions: Cover 1 ½ tbs. of shredded cheese with 1/8 cup warm water. Let stand 10 minutes and drain off excess liquid. Yield: 1 ½ tbs. cheese. Use in casseroles, pizza, soups, chili, salads.
