A pale yellow pea that has been husked and split in half that has more of an earthy flavor than the whole green pea. The yellow split pea is similar to lentils in versatility and nourishment. It is most commonly used in thick soups and stews. The peas break apart when cooking adding to the texture of the dish. They can also be used to make dips and spreads or included with other ingredients in baked casseroles or stuffing. A delicious variety to include in your long-term food storage.
Shelf Life
Ingredients: Yellow split peas.
Directions: Rinse. For overnight soaking, cover each cup of peas with 3 cups water and let stand overnight or 12 hours. Rinse and cover with water. Bring to a boil and simmer about 1 hour. May use seasoned stock made from chicken, beef, ham or other meat. Chopped vegetables may be added if desired. Season as desired and serve.
