Rainy Day Foods  long grain white rice is enriched with iron, niacin, thiamine and folate. When cook the rice and to retain vitamins, do not rinse off before or drain after cooking.  White rice is a food staple that is kind to the budge.  This makes it a great staple food to include in your long-term food storage.

Ingredients: Long grain white rice enriched with iron, niacin, thiamine, and folate.  To retain vitamins do not rinse off before or drain after cooking.

Directions:  Rinse rice til water is clear. This helps get rid of any starch and impurities. Add 1 cup rice to 1 /34 cups cold water. More water (1/2 cup) for higher altitudes. May add 1 tbsp. margarine or butter and 1 tsp. salt. Cover with lid and bring to a boil. Lower heat and cook 15-20 minutes, keeping lid on and avoid stirring. Let stand 10 minutes and then fluff with fork before serving.

Add 1 cup rice to 2-2 1/2 cups cold water.
